
How to Make Sushi Rice:
If you wanna learn how to make sushi, you need to learn how to make the seasoned sushi rice first. Every kind of sushi starts out with lots of this stuff. Don't worry, if you can make a pot of rice, you can make sushi.
Sushi can be made with brown or white rice, it's up to you. However, make sure the rice is short grain, otherwise the texture and consistency won't be decent. Generally I use short grain brown rice, but I also like this Japanese short grain white rice called "Kokuho Rose." You can find it in any decent Asian grocery store. Even natural foods stores sometimes sell it under the name "sushi rice."

Preparing the Rice
While the rice is steaming, mix together:
OK. Take out the steamed rice and dump it out onto a cookie sheet that has at least an inch high rim. Start spreading it out with a wooden paddle, spatula, or spoon...whatever you've got. Give your vinegar/sugar/salt mix a quick stir and slowly drizzle it over the rice as you stir stir stir. Don't dump it out all at once, but just drizzle and stir. Quickly and evenly spread out the rice to cool to room temperature.
While rice cools, prepare some fillings.
