Pink Frosting

I used the recipe for Fluffy White Frosting from raggedy annarchy's and colorized it.

What You Need:

4 cups powdered white sugar (one standard box)
1/2 cup vegan margarine (soft, or you'll be mixing forever to get all the lumps out)
1/2 cup vegetable shortening
1 teaspoon salt
1 teaspoon pure vanilla extract
2-4 tablespoons beet juice. (Grate one medium raw beet into coarse shreds and then squeeze out juice with your fist.)

What You Do:

Mix together the sugar, fats, and salt.
Add and beat in the vanilla.
Then beat in the beet juice, adding one tablespoon at a time, until desired consistency is reached.

If the frosting is very soft, let it firm up in the fridge for a bit before you decorate your cake. Sprinkle with co-co-nut. mmmMmMMM.
