Here's a really simple custard that fills one double layer cake. It's pretty zingy!
What You Need:
3/8 cup unbleached granulated sugar
1 tablespoon cornstarch
1/2 cup water
1/8 cup freshly squeezed lemon juice
1/3 cup sweetened coconut flakes
a tiny dab of yellow food coloring paste.
What You Do:
Mix together the sugar and cornstarch. Add the water, juice and food coloring and whisk well to get out any cornstarch lumps.
Bring to a boil and add coconut. When the custard is thick and has turned clear, remove from heat and cool.
Chill in the fridge before use.
Spread into the middle of a double layer cake. You can check out the
