Spinach Saag

Ingredients:

Steps:

  1. Wash the spinach well in a sinkful of water. Spinach is often grown in sandy soil, so it is really important to make sure that it's washed to remove the grit.
  2. Drain and cut the spinach crosswise into very fine strips.
  3. Heat the oil in a large wide saucepan over medium high heat. When hot, add the chile, onion, and garlic.
  4. Stir until the onions turn medium brown.
  5. Add the chopped tomato and fry for two minutes.
  6. Add the spinach and salt and stir well.
  7. Cover the spinach to wilt.
  8. Stir again, lower the heat to medium, cover and cook for 25 minutes.
  9. Uncover; add the garam masala and stir.
  10. Cook uncovered for 5 more minutes or until almost none of the liquid is left at the bottom of the pan. Turn up heat if necessary.
  11. Serve.
